As Jakob Itzlinger took over the mill from his father in 1983, it was his concern to reproduce its original power and wholesomeness of the whole grain.


Everything must be natural and unadulterated as possible and come from the surrounding area. It also includes an eco-friendly power generator.


Itzlingers use water power of the creek. So that no trace element is lost in the bread, they grind the whole grain with their Osttiroler stone mill until just before they prepare the dough.
